whole wheat banana bread recipe:
INGREDIENTS
3 or 4 ripe bananas, smashed
1/3 cup of margarine or butter
1 cup splenda (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of whole wheat flour
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the splenda, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the whole wheat flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
molasses muffins with flax and dates
2 eggs white
1/3 cup (115 g) molasses
1 cup (240 ml) buttermilk (or 1 cup milk mixed with 1 teaspoon vinegar)
3/4 cup (120 g) ground flaxseed meal
1/2 teaspoon salt
1 cup (175 g) chopped dates
1 1/2 cups (210 g) whole wheat or half and half (50 %whole wheat, 50 % flour)
1 teaspoon baking soda
1. Preheat the oven to 350 °F (180 °C), and prepare 12 muffin cups with papers or cooking spray.
2. In a large bowl, mix together the egg, molasses, buttermilk, flax, and salt, and add the dates to the batter.

3. In a separate bowl, mix together the flour and baking soda
4. Gently stir the flour mixture (vanilla optional) into the egg mixture.
5. Fill the muffin cups 2/3 full. Bake for 18 to 20 minutes or until a toothpick inserted near the center comes out clean.
